Constant care is required
While end grain cutting boards are considered the best for cutting with high end cutlery, you will need to ensure the board is cleaned shortly after use and stored upright in order to dry. You should also maintain a schedule of applying mineral oil to keep the wood from drying out and splitting. NEVER place your end grain cutting board in the dishwasher.
